Target Information

Bovine casein kappa, also known as κ-casein, is a phospho-glycoprotein that plays a crucial role in the stabilization of casein micelles in milk. It is the source of caseinomacropeptide (CMP), released after rennet treatment during cheese production. CMP has been shown to possess in vitro anti-inflammatory and antibacterial activities , and it can modulate immune responses, promote bifidobacterial growth, and neutralize enterotoxins.
