Trypsin is a serine protease which catalyzes a hydrolytic cleavage of peptides at the carboxyl group of the basic amino acids arginine and lysine. It exists in bacteria, fungus and mammals and it is closely linked with metabolism, digestion and coagulation in mammals. It can be used as a biomarker to assess the digestive function in pigs.
