Aralkylamine N-acetyltransferase (AANAT), also known as arylalkylamine N-acetyltransferase or serotonin N-acetyltransferase (SNAT), is an enzyme involved in the day/night rhythmic production of melatonin by modifying serotonin. It is an acetyl-CoA-dependent enzyme belonging to the GCN5-related family of N-acetyltransferases (GNATs). Bovine Serotonin N-Acetyltransferase is encoded by the AANAT gene in cattle. It is a rate-limiting enzyme for melatonin synthesis, which regulates melatonin production in mammals including cattle.
