Fibrinogen beta chain (FGB), also known as factor I, is a protein found in humans and most other vertebrates with a similar system of blood coagulation. It serves as the beta component of fibrinogen, a blood-borne glycoprotein composed of three pairs of nonidentical polypeptide chains. Bovine Fibrinogen Beta Chain is encoded by the FGB gene in cattle. Bovine fibrinogen is currently used in the food industry as a binding agent in restructured meat products.
