Target Information

Sorbitol Dehydrogenase is encoded by the SORD gene in pigs. It is a cytosolic enzyme involved in carbohydrate metabolism and it converts sorbitol into fructose. Alongside aldose reductase, it provides a way for the body to produce fructose from glucose without using ATP. It also plays a role in metabolizing dietary sorbitol, although sorbitol is not as well absorbed in the intestine as glucose and fructose.
