Target Information
Bovine alpha-S1-casein (CSN1S1) is a primary protein component of Bovine milk, contributing significantly to its nutritional value. It aids in calcium absorption and is a key factor in milk's clotting properties used in cheese production. In the dairy industry, CSN1S1 content affects the texture, yield, and quality of cheese, making it an important economic factor. It also plays a role in infant nutrition and allergies.
