Target Information
Diacylglycerol (DAG) is a glyceride consisting of two fatty acid chains covalently bonded to a glycerol molecule through ester linkages. There are two possible forms of DAG: 1,2-diacylglycerols and 1,3-diacylglycerols. Diglycerides naturally occur in food fats but are minor compared to triglycerides. Diglycerides, often combined with monoglycerides (E471), serve as common food additives. Diacylglycerol O-acyltransferase 1 (DGAT1) gene has been reported on chromosomes 14, 15, and 9 in cattle, goat, and buffalo and sheep, respectively.
