Target Information

Advanced glycation end products (AGEs) are proteins or lipids that undergo glycation due to exposure to sugars. These compounds serve as biomarkers associated with aging and the onset or progression of various degenerative conditions, including diabetes, atherosclerosis, chronic kidney disease, and Alzheimer's disease. Foods derived from animals, particularly those rich in fat and protein, tend to be AGE-rich and can further accumulate AGEs during cooking processes. Bovine serum albumin-AGE was found to have both immunosuppressive and pro-inflammatory effects.
