Target Information
Bovine Malate Dehydrogenase, Cytoplasmic is encoded by the MDH1 gene in cattle. MDH catalyzes the reversible oxidation of malate to oxaloacetate using the reduction of NAD+ to NADH. The enzyme is important in gluconeogenesis, catalyzing the oxidation of malate to oxaloacetate, and is a relevant player in meat quality characteristics because this enzyme is involved in energy metabolism and affects how pH drops, changing the conversion of muscle to meat.
