Ovalbumin is encoded by the chicken OVAL gene. It is the most prominent protein found in egg white, making up 60-65% of the total protein mass. Ovalbumin displays sequence and three-dimensional homology to the serpin superfamily, although it differs from most serpins in that it is not a serine protease inhibitor. Ovalbumin adopts a serpin-like structure. Its relative molecular mass is approximately 42.7 kDa.
