Target Information
Albumin, a group of globular proteins, primarily includes the serum albumins. These proteins are water-soluble, exhibit moderate solubility in concentrated salt solutions, and undergo heat denaturation. Notably, fish serum albumin (FSA), sourced from aquatic environments, holds promise as a potential nutraceutical. In a previous study, Scrombidae exhibited the highest concentration of FSA (12.61 g/L), making them a valuable source for producing albumin-based nutritional and/or clinical products.
