Target Information
Bovine Beta-lactoglobulin is the most abundant protein in the whey fraction of Bovine milk, accounting for about 50% of the total whey proteins. It is a globular protein with a molecular weight of approximately 18,000 Da and is known for its ability to bind to a variety of small hydrophobic molecules, such as retinol, fatty acids, vitamin D, cholesterol, and others. This protein plays a role in the transport of these essential nutrients and may also contribute to the passive immune transfer to the neonate. Beta-lactoglobulin has potential applications in the food industry due to its functional properties, such as its ability to form gels when heated, which can improve the texture of dairy products. It is also of interest in pharmaceuticals for its potential role in drug delivery systems.
