Heat shock proteins, including HSP90, account for 1-2% of total protein in unstressed cells. Heat shock protein 90 (HSP90) is a molecular chaperone involved in several cellular processes. HSP90 has a mass of approximately 90 kilodaltons (kDa), which is why it is called "90." Research has shown that in pig longissimus dorsi muscle, HSP90 may play a critical role in meat water retention and may be involved in postmortem meat quality development.
