CSN2 encodes the milk protein beta-casein. Cow milk has 2 major subvariants of beta-casein protein, A1 and A2. A2 milk consumption has beneficial effects while A1 milk consumption is associated with enhanced inflammatory markers. A1 and A2 beta-casein are genetic variants of the beta-casein milk protein that differ by one amino acid.
