Target Information
Diacylglycerol (DAG) is a glyceride consisting of two fatty acid chains covalently bonded to a glycerol molecule through ester linkages. There are two possible forms of DAG: 1,2-diacylglycerols and 1,3-diacylglycerols. Diglycerides naturally occur in food fats but are minor compared to triglycerides. Diglycerides, often combined with monoglycerides (E471), serve as common food additives. DAG also functions as a second messenger signaling lipid. There is possibility of developing a pet food using DAG to control weight and serum lipid levels without compromising caloric intake.
