Porcine calpastatin is an endogenous inhibitor specific to the calpains, a family of calcium-dependent proteases that play a crucial role in post-mortem proteolysis in muscle cells, affecting meat tenderness and quality. It is associated with the rate of degradation of structural proteins and is implicated in the regulation of meat color, pH, water holding capacity (WHC), and texture parameters such as toughness, firmness, cohesiveness, chewiness, and resilience.
