Target Information
Bovine beta-lactoglobulin (LGB) is the major whey protein in bovine milk, accounting for about 50% of the proteins in whey. It plays a role in hydrophobic ligand transport and uptake, enzyme regulation, and possibly in the neonatal acquisition of passive immunity. Additionally, it has excellent heat-set gelation properties, making it a valuable food ingredient for water-binding and texturization in various food products.
