Insulin (INS) is a peptide hormone produced by islet beta cells that regulates the metabolism of carbohydrates, fats, and proteins by promoting the absorption of glucose from the blood into liver, fat, and skeletal muscle cells. Chicken tissues have physiologically lower insulin sensitivity compared to mammals, and the type of diet had a remarkable influence on the insulin homeostasis of chickens.
