Bovine casein kappa (CSN3), also known as kappa-casein, is a major component of the casein complex in Bovine milk, accounting for approximately 12% of the total casein content. It is a single polypeptide chain with a highly hydrophobic N-terminal and a hydrophilic C-terminal, consisting of 169 amino acids and a molecular weight of 19.2kDa. Kappa-casein plays a crucial role in the stability and aggregation of casein micelles, and it is essential for the coagulation of milk, which is vital for cheese production and the digestion of milk by neonates. User Note
