Target Information

Sheep myoglobin (Mb) is a key protein in sheep muscle tissue that is responsible for oxygen storage and transport. It plays a crucial role in maintaining the color of meat, as myoglobin contains a heme group that can bind to oxygen and give meat its characteristic red color. In sheep, myoglobin is important for the quality and marketability of meat, as it affects the appearance and perceived freshness of the product. The content of myoglobin can also be used as an indicator of meat quality, with higher levels correlating with darker, more intensely colored meat, which is often preferred by consumers.
