Target Information
Beta-enolase is a glycolytic enzyme that catalyses the conversion of 2-phosphoglycerate to phosphoenolpyruvate. Due to the nature of its glycolytic activity, ENO3 levels in skeletal muscle are dependent on fibre type. Levels of ENO3 are higher in fast-twitch glycolytic type IIB fibres (the most glycolytic muscle), followed by IIX, IIA and I. Chicken breast is mainly composed of type IIB or anaerobic fibres. The lower abundance of ENO3 in Wooden Breast (WB) also suggested a possible fibre type switch from fast-twitch glycolytic to slow-twitch oxidative fibres in response to WB myopathy.
