Carboxypeptidase B, also known as CPB, is a protease enzyme that hydrolyzes peptide bonds at the carboxy-terminal (C-terminal) end of a protein or peptide. It cleaves positively charged amino acids such as arginine and lysine. Carboxypeptidase B is encoded by the CPB1 gene in pigs. It is a key enzyme involved in insulin conversion and highly specific for excising C-terminal Lys and Arg residues from peptides and proteins.
