Target Information
Bovine beta-lactoglobulin (β-LG) is the major whey protein in bovine milk, accounting for approximately 60% of the total whey protein. It is a globular lipocalin protein that consists of 162 amino acid residues with a molecular mass of about 18 kDa. The primary physiological function of β-LG remains speculative, but it is believed to be involved in the transport of hydrophobic ligands and nutrients from mother to offspring. It also plays a role in enzyme regulation and neonatal passive immunity. Moreover, β-LG has the ability to bind to a variety of hydrophobic molecules, which may serve to deliver fatty acids to the enterocyte in the digestive system.
