Target Information
Bovine Sorbitol Dehydrogenase is encoded by the SORD gene in cattle. It is a cytosolic enzyme involved in carbohydrate metabolism. It converts sorbitol, the sugar alcohol form of glucose, into fructose. Alongside aldose reductase, it provides a way for the body to produce fructose from glucose without using ATP. This enzyme is considered liver specific in all species.
