Target Information

Bovine beta-lactoglobulin B (BLG-B) is a major whey protein found in bovine milk, playing a significant role in the nutritional and functional properties of dairy products. It is a member of the lipocalin family and has a high affinity for binding small hydrophobic molecules, such as fatty acids and retinol. BLG-B is particularly important in the formation of stable emulsions and foams in dairy products due to its ability to adsorb at the air-water and oil-water interfaces.
