Citrinin (CIT) is a mycotoxin commonly detected in food. As a secondary metabolite produced by fungi, it can contaminate long-stored food, leading to various toxic effects such as kidney, liver, and cellular damage. CIT can affect a broad spectrum of foods and feeds at any stage: pre-harvest, harvest, or post-harvest. It is typically found in beans, fruits, vegetable and fruit juices, herbs and spices, dairy products, and red mold rice.
