Target Information

Amylase is an enzyme that breaks down carbohydrates, like starches, into simple sugars like glucose. Amylase is produced in the saliva and pancreas. α-amylase is a family member of retaining carbohydrases. Porcine α-amylase is an endo-amylase and has a high efficiency in catalyzing the hydrolysis of α-(1, 4)-glucosidic bonds in both amylose and amylopectin through multiple attacks toward the non-reducing end.
