Bovine xanthine dehydrogenase (XDH) is a molybdenum-containing flavoprotein enzyme involved in purine metabolism, catalyzing the oxidation of hypoxanthine to xanthine and further to uric acid. It is a key enzyme in the catabolism of purines and is closely related to the production of reactive oxygen species (ROS) and nitric oxide (NO) in various cellular processes. In bovine milk, XDH can be converted to xanthine oxidase (XO), a form that uses molecular oxygen as an electron acceptor, which is significant for its role in the innate immune system and milk quality.
