Thiobarbituric acid reactive substances (TBARS) are byproducts resulting from lipid peroxidation, specifically as degradation products of fats. They can be detected through the TBARS assay, which employs thiobarbituric acid as a reagent. TBARS values are frequently used to assess the extent of fat oxidation in meat products.
