Bovine lactoperoxidase (LPO) is an oxidoreductase enzyme present in milk, saliva, and other secretions. It is a key component of the lactoperoxidase system (LPS), which has antimicrobial activity against a broad range of microorganisms. LPO catalyzes the oxidation of thiocyanate (SCN−) by hydrogen peroxide (H2O2) to form hypothiocyanate (OSCN−), a potent antimicrobial agent. This system is crucial for protecting the mammary glands, lactation, and the intestinal tract of newborns against pathogenic microorganisms.
